1 can coconut milk
4 tbs chia seeds
1 tbs maple syrup (or honey)
Pinch of salt
Leave in fridge a few hours
Top with frozen fruit of choice when ready to eat!

Coconut Chia Pudding
This soft and creamy Coconut Chia Pudding is a simply good treat, which you prepare in advance to enjoy at brekkie or in the arvo, ideal for a lazy Saturday! Have a good one!
Ingredients (serves 1):
1/2 cup coconut yoghurt
1 tablespoon chia seeds
1 teaspoon demerara sugar
Combine coconut yoghurt, chia seeds and demerara sugar. Give a good stir until well-blended.
Spoon mixture into serving bowl, cover with cling film, and chill in the refrigerator, 4 hours to overnight.
Enjoy Coconut Chia Pudding, drizzled with honey or Maple Syrup.
