An easy, nutritious lunch option: butternut squash stew
Whenever I make this dish, I feel like I am eating something special because it is made from my favorite vegetable, which has a wide range of health benefits available to it.
There are a variety of ways to cook muscat pumpkin pulp, including baking, boiling, frying, and stewing. It is common to make pumpkin purees, cream soups, caviar, pancakes and milk porridges from pumpkin. They are also used to make pastries. Pureed butternut squash pairs well with soya meat substitutes when flavored with spices.

Ingredients:
Butternut squash (seeds removed) 1x
Coconut milk 400 ml
A sprinkle of Vegeta seasoning
A little salt to taste
Utensils necessary for cooking
Slicing knife
Large mixing bowl
Deep frying pan
Cooking method:
After rinsing under running water, disinfect the pumpkin with a sprinkle of baking soda solution. Follow up with a thorough rinse. 
Prepare a pumpkin by cutting it into two relatively equal parts, removing the peel, and chopping the flesh into even cubes.
Toss cubes thoroughly in a large mixing bowl with salt and vegeta to taste.
Pour some olive oil to the skillet after it has been preheated to Gas mark 6 (400 degrees Fahrenheit, 200 degrees Celsius). Spread the oil evenly all over the surface of the skillet.
Place the cubes in the pan, stir thoroughly, and top with coconut milk. After that, cover the pan with a lid and simmer the pumpkin for ten minutes.
On its own or as a side dish, serve immediately.
Among the many benefits of muscat pumpkin are its vitamins. Among the vitamins in pumpkin, 59% are vitamin A, 84% are beta-carotene, and 23% are vitamin C. Other vitamins included in its chemical composition are: B, E, K and magnesium, potassium, calcium, phosphorus, sulfur, copper. Pumpkins also contain folic and pantothenic acids, essential amino acids, and pectin in addition to the substances described.
How to choose
Pick a medium or large butternut squash when shopping for butternut squash. A large pumpkin's pulp will be softer and more fragrant than a small pumpkin's pulp. Be aware of the fact that the peel is uniformly colored and saturated. Dry stalks are an indication of ripe pumpkins.
Storage
For long-term storage, pick a pumpkin with a firm, smooth skin that is well ripened, uncut, and not cut. Make sure the vegetable does not have any mechanical damage on its surface, which can quickly lead to decay.

I like to re post this every now and again because it's good advice I frequently forget.
Also I post it in part because I'm laying in bed with Covid (for the first time) at the moment and eating as much fruit as I can to expedite recovery. I grabbed a banana and orange, ate the banana and asked myself if this was a good combo or not. Glad I checked, because it was not. The last thing I need is indigestion.
But because it's me, my main focus has been doubling down on nutrition and observing my own results. I was eating plant based before, but sometimes I went a little too hard on the peanut butter trail mix, breads, or other sweet treats.
My doctor said rest and hydrate, but I took it a step further and since testing positive have cut out wheat, sugar, and any kind of dairy or processed foods. I figure nothing that could make inflammation worse. I've been consuming tons of herbs like cinnamon, ginger, echinacea, and turmeric while eating fresh citrus fruits like lemon, orange, strawberry, and pineapple daily.
Now I did a bit of tooling about the internet to see if any studies had been done over the last four years regarding a plant based diet and it's effects on Covid. The results were hopeful.
I found one study that said,
"Merino et al revealed that healthy plant-based foods could decrease the risk and severity of COVID-19.21 In this large survey, it was shown that as the quality of the diet rises, the risk of disease COVID-19 (HR 0.91) and severe COVID-19 (HR 0.59) diminishes.
Which gave me hope so I kept digging.
Another one stated, "Compared with an omnivorous Western diet, plant-based diets containing mostly fruits, vegetables, grains, legumes, nuts and seeds, with restricted amounts of foods of animal origin, are associated with reduced risk and severity of COVID-19. "
And I can tell you that has been my experience thus far. I developed a fever that went away after 24 hours and didn't go over 100.4. My only other symptom has been a stuffy nose with sinus pressure. Im definitely tired and need to limit activity but I can still taste and smell, breathe through my nose a decent amount of the time, and I'm not coughing. I'm lucky in that I have time off from work and for that I am grateful, as rest is another key component.
And why would a plant based diet be so beneficial for mitigating Covid symptoms? Because, "plant-based dietary patterns are rich in antioxidants, phytosterols and polyphenols which positively affect several cell types implicated in immune function and exhibit direct antiviral properties."

I was really scared at first and this information helped me feel more empowered in my health and recovery. It's not a substitute for any medical attention or prevention like vaccines, hand washing, and mask wearing- all things I was doing regularly prior to getting sick which may have also been variables in keeping my symptoms down. An unfortunate side effect of going thru consistent character development is sometimes ur perk selections clash. Like yeah I'm into hockey now. Hockey is sick af and sports entertainment is designed to be fun and I love having stuff to talk about with the straight white people my life. Yeah I'm vegetarian now. It slaps actually, my tummy doesn't hurt as much and once you focus on the veggies in a dish you can actually bring out incredible flavors like you've never dreamed of and it's the one consumption choice I've ever made that feels like it has an effect on literally anything.
But being a vegetarian AT a hockey game??? Literally an anxiety dream. A Tantalus roleplaying exercise. It's beefdogs all the way down, bros. Pulled pork sandwiches from wall to wall. What do i EAT bro?? Catch me trying to get drafted as a goalie so I can eat pucks cuz galvanized rubber isn't STRICTLY edible but at least it's not an animal product bro

I think veganism is a really cool lifestyle for people who are able to access it safely and healthily. But one thing I've struggled with a lot in talking to vegans, especially political and philosophical vegans, that I've personally met (important caveat) is the alarming way some of them have talked about the natural world. Strikingly, one conversation I remember having a couple years ago involved some fairly conventional statistics about environmental impacts of animal agribusiness and urban sprawl that culminated in some less-statistically-based conclusions about how human development is wholesale bad for the ecosystem, and given that we both lived in a medium-sized city, I responded (as close to verbatim as I remember) "But this is an ecosystem. We live here." and this was clearly not the correct response for my conversation partner, who doubled down and then pivoted to a different talking point.
And, like, this made my stomach sink to hear. I'm by no means a perfect (and by most metrics possibly not even "good") ecology person; I mean, I've lived in fuckin colonized America for the overwhelming majority of my life. But I do care deeply about the places I live - I make an honest effort to try and notice the wildlife that I share space with, talk to bees, learn the names of ditch flowers and weeds, and identify local plants vs introduced ones and do what I can to be mindful of how my actions impact them. To talk with someone who on the surface shared those values but scratching just below the surface felt more like "nature good. humans bad. bad humans, bad." was gutting. I don't live in some separate reality from the grass and squirrels and sweetgum trees in my neighborhood. The sort of moralism and mindset of abstenant anthropic stewardism they expressed resounded in the part of my brain that remembers growing up in an evangelical Christian bubble. I still struggle to understand how someone who wants so passionately to make the world a better place can reconcile that goal when their rhetoric sounds like the secular eco-version of the armageddonist worldview I grew up around.
It hurts a little bit. The world is literally not a walled garden to tended, partitioned off from humanity. It's an open space, sprawling and full of weird weeds and beasties, and also I live here and you do and they do too and we all deserve to have the best environment we can create for ourselves. All of us.
This is an ecosystem. We live here.

Oxford University research has today revealed that, in countries such as the US, the UK, Australia and across Western Europe, adopting a vegan, vegetarian, or flexitarian diet could slash your food bill by up to one-third.

It found that in high-income countries:
Vegan diets were the most affordable and reduced food costs by up to one third.
Vegetarian diets were a close second.
Flexitarian diets with low amounts of meat and dairy reduced costs by 14%.
By contrast, pescatarian diets increased costs by up to 2%.
